CHUNKY MONKEY MUFFINS 🙊🍌🍫 but using chickpeas and zucchini for a healthy twist!
These were a big hit this week, and I love a tasty snack for the kids (and myself!) that has an added boost of protein and veggies. Chickpea flour so versatile and I love it for these muffins - its nutty flavour makes it great for baking, and it's also a great source of fibre and protein. Zucchini is my favourite add in when trying to boost veggie content as its high in antioxidants and a great boost for digestion.
These muffins are the perfect meal prep for an on the go snack or even a school lunchbox.

Chunky Monkey Muffins
gluten free, dairy free, vegan

cook time: 25 MINUTES
total time: 35 MINUTES
INGREDIENTS
dry ingredients
1 1/2 cups chickpea flour
1 tsp baking soda
1 tsp cinnamon
dash salt
wet ingredients
2 ripe bananas, mashed
2 tbsp olive oil
1/4 cup maple syrup
2 tsp vanilla extract
1 flax egg
1 medium zucchini, shredded and squeezed of excess moisture
⅓ cup almond milk
add ins
1 block vegan chocolate, roughly chopped
INSTRUCTIONS
1. Preheat oven to 180 degrees and grease your muffin tray.
2. Combine fry ingredients in one bowl and wet ingredients in a seperate bowl.
Gently stir dry ingredients into wet ingredients, then fold in chocolate chips.
3. Divide evenly into 12 muffins and bake for 25 mins or until cooked through. Allow to cool for 10 mins in tray before transferring to a cooling rack.
