Blueberry Vanilla Protein Muffins (GF, DF, Ve)

Protein muffins are an easy fave - quick to whip up, and the protein powder helps balance the macros so you can enjoy your sweet treat just that little bit more.


This is my go to recipe; I love the vanilla blueberry combo but feel free to sub in/out protein powder flavours and add ins (hint: chocolate protein powder and choc chips is amazing).

Blueberry Vanilla Protein Muffins

gluten free, dairy free, vegan

yield: 6 MUFFINS

prep time: 5 MINUTES

cook time: 25 MINUTES

total time: 30 MINUTES


INGREDIENTS


  • 1/2 cup almond milk

  • 1/3 cup maple syrup

  • 2.5 tbsp melted coconut oil

  • 1 tsp vanilla extract

  • 1/4 cup almond meal

  • 3/4 cup buckwheat flour

  • 1/4 cup vanilla protein powder

  • 1 tsp cinnamon

  • Pinch of salt

  • Dash baking powder

  • Lots of frozen blueberries


INSTRUCTIONS


1. Add wet ingredients to a bowl and combine.


2. Stir in dry ingredients and mix well, then gently fold in blueberries.


3. Evenly spoon into 6 muffin moulds.


4. Bake for 25 mins or until cooked through. Allow to cool in try for 10 mins before transferring to a cooling rack.
