Protein Cookie Dough Slice (GF, DF, RSF, Ve)

I love cookies, but living with two little cookie monsters means they're on high rotation and baked quite frequently - so I decided to mix it up and bake them as a slice! This meant they stayed a little goes-er and closed to a thick, warm cookie dough consistency!
Totally delicious and perfect to have on hand to satisfy sweet cravings while ensuring you're getting a better balance of macros than in your standard cookie.
Obviously the quality of protein you choose will impact the deliciousness of your cookie slice, so choose wisely!

Protein Cookie Dough Slice
gluten free, dairy free, refined sugar free, vegan

INGREDIENTS
1 tbsp peanut butter (I like smooth for the consistency, but totally a personal preference)
3 tbsp maple syrup
1 tsp vanilla extract
2 tbsp flax meal mixed with 5 tbsp water to make 2 x flax eggs
2 tbsp melted coconut oil
1 cup almond meal
2 scoops (80g) Macro Mike Cookie Dough Protein powder
1 tsp baking powder
chocolate chips
INSTRUCTIONS
1. Mix your flax meal and water to make your flax eggs and set aside to thicken. Preheat oven to 160 degrees.
2. Using a food processor, mix together all wet ingredients.
3. In a seperate bowl, combine all dry ingredients. Mix wet ingredients into dry ingredients until dough is formed. Mix through chocolate chips.
4. Spread evenly across a greased baking tray and use your mixing spoon to firmly press down.
5. Bake for 10-15mins until slice is set. Enjoy!
