I love a good salad, but I think if I'd stuck to the basic health-girl 'dash of olive oil and a squeeze of lemon' as a dressing I would have been sick of salads YEARS ago.
Most star bought salad dressings fall into one of two very distinct categories; ridiculously expensive, or full of low quality ingredients. I absolutely love making my own dressings for a fraction of the cost with ingredients I already have. Not only are they delicious, but also super cost effective and easy. In fact I not even sure if you can call this a recipe - we are literally just adding ingredients to a jar and shaking!
This will keep for about a week in a tightly sealed jar, so perfect for meal prep (just add to your meal when you are ready to eat). If it separates in the fridge just give it a good shake before serving. Great on all salads.

Turmeric Peanut Butter Dressing
gluten free, dairy free, refined sugar free, vegan
yield: 4-6 serves

INGREDIENTS
60g peanut butter (I like smooth for the consistency, but totally a personal preference)
125mL water
juice of half a lemon
1 tsp minced ginger (I love this one, or you can use fresh)
1 tsp turmeric
2 tbsp maple syrup
dash of salt and pepper to taste
INSTRUCTIONS
1. Add all ingredients to a clean jar. Tighten lid and shake to combine.
